While spring and summer may feel like prime time for produce, winter makes way for its own mix of delicious fruit and vegetables. As the season for citrus, root vegetables, and warming flavors, there are many recipes that will satisfy your palate. Here are a few we’re particularly excited to try in the winter months.
Brussel Sprouts
Brussel sprouts are a fan favorite and for good reason. When prepared properly, they are crispy on the outside and tender on the inside. Plus, they hold flavor very well. We’re loving this recipe from Erren’s Kitchen which embraces simple ingredients like garlic, parmesan cheese, olive oil, salt, and pepper. After preheating the oven to 400 degrees, cut the sprouts in half and cover them with all the ingredients. Roast for around 20-25 minutes. Garnish with flaky sea salt and lemon and enjoy!
Citrus Salad
This salad from The Spruce Eats will add bright flavors to any winter meal. First, prepare a honey-citrus dressing with olive oil, orange juice, lemon juice, champagne vinegar, white wine vinegar, honey, lemon zest, dijon, salt, and pepper. After preparing the dressing, put together a salad with sliced orange, fennel, grapefruit, radicchio, and toasted pistachios. Mix it all together and pair with a roasted chicken or grilled steak.
Sweet Potato Gnocchi
It’s no secret that sweet potato is a starring root vegetable on many dinner tables—and this recipe from The Food Network lives up to the hype. After combining cooked sweet potato, flour, and egg, roll out the dough into tubes and then cut into a gnocchi shape. Then, cook the pancetta, fry sage, and combine with boiled gnocchi for a decadent winter meal.
